I used to laugh when I saw articles online promising me breakfast in 5 minutes. Either there was some sort of catch, like I needed to do 15 minutes of prep the night before and then do the last 5 in the morning, or it was something that would leave my family hungry again within the hour.
So when I say these options will get you breakfast in 5 minutes, I mean you can start at 7:00 and have something that will keep everyone’s hunger satisfied on the table by 7:05.
1. Egg and avocado toast:
You know that you can fry an egg in a pan in about 3 minutes, right? Use that downtime to toast some bread, mash together an avocado and some lemon juice, and add salt and pepper, and spread it onto your toast. Top the egg on top and you’ve got a hugely satisfying breakfast in no time flat! Get me recipe here.
2. Quick strawberry-banana oats
Hearty oats are a great way to fuel your morning. Simply combine rolled oats with milk and chia seeds, microwave for a few minutes, then stir in the fruit, nuts and sweetener of your choice – I use maple syrup in mine to keep it natural.
3. Brownie batter overnight oats
Most overnight oats feature some combination of plain yoghurt, nuts and fruits, but I’ve included this one for those days when you just really need something chocolatey. Rolled oats are combined with yoghurt, chia seeds, cocoa powder, and chocolate chips or nut butter (if desired) for a recipe that will take care of even the fiercest chocolate craving!
4. Egg omelette in a mug
If you’re not opposed to making your breakfast in the microwave, you can whip together an omelette in under five minutes. You can add whatever you usually put in your omelette, but this version with roasted red peppers, spinach, and feta cheese is a great change of pace from the typical breakfast fare.
5. Banana bread in a mug
You know what else you can make in a mug in a hurry? Banana bread! You’ll just be mashing up a banana and mixing it with brown sugar, cinnamon, flour and a few other ingredients in this recipe that has 3 minutes of prep and 2 minutes of cooking time. I told you I was serious about 5 minutes! This can be served with some yogurt on the side if you’re feeding someone with a big appetite.
6. Honey-pistachio ricotta toast
Toast with jam has a way of making you hungry again pretty soon, so you need to top it with a protein to make a proper breakfast. I like to slather a slice of whole grain bread with ricotta cheese, then add a drizzle of honey and chopped pistachios on top. This is especially good served with a sliced peach if you have time!
7. Apple and nut butter toast
While we’re on the topic of toast with protein, here’s another variation. While toasting a piece of bread, cut an apple into very thin slices. Spread peanut or almond butter on the toast, then top with the apples and a sprinkle of cinnamon or ground cardamom if you’d like. If you’re not an apple fan, this is pretty great with bananas, too.
8. Yoghurt parfait
If your kids are more likely to eat food that is eye-catching, it’s hard to go wrong with a yoghurt parfait. Grab a transparent glass and layer some yoghurt, berries, honey or jam, and oats, granola or nuts for a quick breakfast that’s as pretty as it is tasty!
9. Smoothie
How could I not mention smoothies here? It’s the ultimate quick breakfast, and you can add whatever ingredients you like. Toss frozen fruit, milk, yoghurt, and even some greens in the blender to whiz up the ultimate healthy, quick breakfast.
10. Eggs in a basket
This super-easy breakfast always goes down a treat with the kids, even if they don’t love eggs. Take a cookie cutter of whatever shape you choose and cut out a piece of whole-grain bread. Then, melt some butter in a skillet, place the bread in it, and break an egg into the hole in the bread. It will be cooked through in 1 or 2 minutes, then you just need to flip it and cook the other side for a minute. Serve with the cut-out pieces of bread and a piece of fruit.
