Slow cooker freezer meals are your ticket to freedom. Tossing ingredients into the slow cooker, with little or no additional prep work is already a dream. Add the words ‘freezer meal’ into the mix, and it sounds way too good to be true. But it’s not. Yes, you can prep a delightful dinner in a mere matter of minutes, but beyond that have an extra 2-3 portions to freeze so you don’t need to cook everyday.
Here are my favourite 7 slow cooker freezer meals, for you to enjoy!
1. Slow cooker lime chicken tacos
These lime chicken tacos are a Mexican lover’s dream! I make this with 2 kgs of chicken breast, so we have enough to freeze for 4 meals. Another bonus is that it’s a dump and go recipe, which I love!

2. Slow cooker honey garlic chicken
Don’t let the photo fool you, this recipe doesn’t require any cooking skills! When freezing, I’d advise you freeze the sauce separately. When you’re going to serve your recipe out of the freezer, defrost the chicken and the sauce as is (in their separate freezing bags or containers), then heat up individually too. Finally, drizzle the deliciously thick sauce over the chicken. Success!

3. Chilli con carne
This is not an actual slow cooker recipe, but I adapt it and cook it in my slow cooker anyhow. The flavours really develop, and I get to make a huge batch without having to constantly monitor it. Serve with boiled rice, and you’ve got yourself a hearty meal!

4. Crock-Pot taco meat
Can you tell we love tacos? 😁 It’s such an easy meal to prep, and super picky-eater friendly! Everyone gets to customise his or her tacos as they please. They make for a fun weekend meal too! In this recipe, I use veal, and a concoction of lovely spices that will make your tastebuds swoon.

5. Crock-Pot sweet potato coconut curry
This vegan dish is extremely tasty! While my 7 year old cringes at the sight of too many ‘visible’ vegetables, this one went down a treat. Even my eldest, who’s quite the carnivore gave it 9 points (and that’s saying something!)

6. Slow cooked rabbit
If you’re not from Malta, then you might think eating rabbit is a little weird – but hey – this is one of our traditional dishes! This recipe is very special because it’s actually my dad’s (he is the best in the kitchen). I asked him if I could adapt it to cook in the slow cooker, and he did – so here we are!
This epic recipe gives you a few options. You can either freeze the extra portions as is, or else move on to my final recipe, spaghetti with rabbit sauce.

7. Spaghetti with rabbit sauce
Another local recipe, spaghetti with rabbit sauce is made with the leftovers from the slow cooked rabbit recipe. We’re cheating here; we made an extra large portion of slow cooked rabbit so we can have plenty of pasta sauce to freeze. Genius, right? This one’s so tasty, you’ll find yourself wanting to make it again and again.

Take it from someone who loves to cook, but also likes to have time left over in her days to do other things besides being in the kitchen – SAVE these slow cooker freezer meals. I’d suggest you at least make one every fortnight, so you always have ready-made meals in the freezer. It’s a gamechanger, trust me!
