Slow cooker cilantro lime chicken tacos
I am wary of dump and go recipes that claim that a recipe is astoundingly good. Very wary. I mean, let’s be honest here, wouldn’t any recipe benefit from a little preparation such as searing meat or frying a little onion or garlic?
To my complete and utter amazement, I did manage to find a recipe which indeed was a dump and go recipe, and honestly, it tasted AWESOME. This one is so easy to prepare it will have you sitting on the sofa drinking a hot drink in minutes.
I found the recipe on www.belleofthekitchen.com, and adapted it to fit my Crockpot Multicooker which is 5.6 litre in size. We ate one portion and I froze another two in ziplock bags, ready to be served next time.
Here’s the exact recipe and cooking instructions I used to cook up these ‘Slow cooker cilantro lime chicken tacos’, for you all to enjoy!
Slow cooker cilantro lime chicken tacos
Ingredients
- 2kg chicken breast
- 2 jars (300g each) of 'Old El Paso' chunky tomato salsa, mild
- 2 packets (35g each) of 'El Sabor' Taco Spice Mix
- 6 limes
- handful of fresh chopped cilantro
Instructions
- Place the chicken breasts in the bottom of your slow cooker. Lay them out evenly.
- Squeeze all the limes onto the chicken.
- Sprinkle all of the taco spice mix on top.
- Cover with the tomato salsa and the cilantro.
- Cover with lid, and set to cook for 4 hours on high.
- When your dish has cooked, place the chicken in a bowl and shred with two forks.
- Add as much of the liquid which is still inside the crockpot as desired, and until you get a good amount of moisture.
- Serve with tacos, taco bowls, or even wraps.
- You can add your favourite toppings: greens, avocado, sour cream, cheese, guacamole, or cherry tomatoes will do the trick!
